These mini meatloaves are so good! I usually make 2 dozen and freeze them before baking in small aluminum foil pans for a quick on the go weeknight supper. I have reduced the ingredients for 4 mini meatloaves, for you.
You’ll need one pound sirloin ground beef, 2 beaten eggs, 1 cup seasoned breadcrumbs, 1 cup feta cheese crumbles, one teaspoon oregano, 2 shallots diced, 1/2 cup chopped spinach (fresh or thaw frozen is fine), 8 slices bacon (halved), salt and black pepper to taste.
In a large mixing bowl add ground beef, eggs, breadcrumbs, oregano, shallots, spinach, feta crumbles, salt, black pepper and with clean hands mix together to combine ingredients…

I was sooo excited that I had a dinner plan! I did make only two loaves out of her recipe instead of four since I didn’t have any mini-meatloaf plans. One of them was perfect for our family of three!

It was so delicious! I did make a few modifications but not much to make mention of… OH! I just found out today I got a Wildcard Contest Winner just 3 days ago on Food52! Oh wowee, you shared my photo, lol. If I’d known you were going to share it I would have taken a better pic with my Canon instead of a crappy cell phone pic. But zowee, thank you! This looks delicious and I appreciated the recipe, Cheryl. Heading after work tomorrow up to my Mom’s for the weekend. Decorating her door and shelf for Valentine’s Day and we will sit and bag up candy for her neighbors and the staff in the dining room since they are not allowed to have “tips.” Take it easy, dear friend. xo
