Roast Beef Au Jus

 

When I went to the Meat Market they had these lovely Roast Beef ready to season and Roast. I love to make several meals from one Roast. A favorite are hot Roast Beef Sandwiches Au Jus on a crusty hard roll. I add sauteed onions and bell peppers and gooey cheese. They are so delicious.

Cold sandwiches are scrumptious and sometimes I slice and freeze the rest for another meal.

Although, beef prices are up, in this case making several meals from one Roast proved to be economical!

Easter Egg-Chicks

These fun hard-boiled decorative eggs are a bit time consuming but a lot of fun to make. I’ve made them the last 4-5 years as a centerpiece for the appetizer table on Easter. I usually make 2 dozen of them. I use large green olives (sliced) for the eyes, Sweet relish to the top of each egg, pimento nose!

Boil the eggs in a large pot for 14 minutes, drain and run cold water over eggs to cool them down. Once cooled to touch peel them, slice the top, add relish with a dab of mustard-mix well, add to top, place back the top of egg, add olives, pimento, done!
