Roast Beef Au Jus

 

When I went to the Meat Market they had these lovely Roast Beef ready to season and Roast. I love to make several meals from one Roast. A favorite are hot Roast Beef Sandwiches Au Jus on a crusty hard roll. I add sauteed onions and bell peppers and gooey cheese. They are so delicious.

Cold sandwiches are scrumptious and sometimes I slice and freeze the rest for another meal.

Although, beef prices are up, in this case making several meals from one Roast proved to be economical!

Grilled Cheeseburger Deluxe

The gang wanted 1/4 pound cheeseburgers with lettuce, tomato, pickles, onion, on an onion roll toasted! Seasoned potato wedges baked and fruit! They were starving until we got home!

I lit the grill, rounded out the Burgers, and voila early supper and everyone is happy.

Its a beautiful day and we will be swimming shortly.

Crock-Pot Chuck Roast with Tomato Salsa

Using your crock pot or slow cooker, first sear the 6 pound Chuck Roast on both sides add into the crock pot. Slice one onion, add one bay leaf, 1-1/2 cups beef broth, dash of salt and black pepper, two garlic cloves. Cover and cook on low 4-5 hours.

Three Roma tomatoes cut into pieces add into a mixing bowl, one tablespoon garlic salt, one teaspoon onion powder, one teaspoon parsley, balsamic vinegar and pure Olive Oil, stir well and refrigerate until ready to serve.

Super tender meat with a tomato salsa and is it ever delicious!

Cupcake Easter Treats

 

 

Easter is not that far off and I love making different treats for the family! I made these several years ago and wanted to share them with you. I usually use any cake mix, chocolate or white or even yellow cake mix. Follow directions for 36 cupcakes using liners.

You’ll need a bag of small jelly beans, coconut flakes colored with green gel (for the grass). I just make a vanilla buttercream frosting.

The handles are thin red licorice, and the cupcakes are topped with jelly beans.

Its just one of several treats I make for Easter!

Chicken~Cheddar Rotini & Asparagus Bake

This casserole dish is so delicious and easy to put together. Cook (8 ounces) Rotini pasta until al dente, rinse, set aside. I use 6 ounces fresh thin asparagus blanched for 3 minutes in salted water, cut into pieces. 2 cups sharp cheddar cheese, one cup of Whole Milk, one cup cooked cubed chicken.

In a 9″ x 13″ non stick baking dish add Rotini pasta, asparagus pieces, stir gently, add milk and cheese, stir again, add chicken cubes and fold into mixture, cover with foil and bake @375 F for 12-14 minutes.

We love a side of fruit with this dish, serve with a green salad if desired.

Toasted Hot Italian Sausage ‘n Pepper Sandwich

We love Hot Italian Sausage and these sandwiches are a huge hit in my household. Thoroughly brown the Hot Italian Sausage links once cooked cut into 2″ pieces. In a saute pan add two tablespoons olive oil, brown one bell pepper (sliced) and one white onion (sliced) until tender, add tomato sauce and return sausage pieces. Cook 6-8 minutes.

I like to add butter on top of the Italian bread and toast lightly, cut loaves in thirds. Cut each third in half and add hot Italian sausage and peppers!

Yummy.

Seashells…

Some days walking the beach we find all sort of seashells. This is my latest find! I gather them up in a pail, bring them home, rinse them off with diluted bleach water, then they dry and are used in craft projects.

At the northern most end of this barrier island (next to the jetty) is where I find them. 

In all of our very busy lives one needs a hobby or two!

Baked Salmon with Lemon Yogurt Sauce

Wonderful Salmon was on sale at our Seafood Market and I could not resist it! I season each Fillet with a lemon pepper seasoning, fresh lemon juice and broil 4-5 minutes (skin side down). For the easy delicious sauce I use Greek Yogurt, lemon juice. black pepper, stir well. Spread on top, plate and devour!

Coat the cooked Salmon with the sauce and you will love the simple flavors. We love this with a green mixed salad and a vinaigrette dressing.

So light and flavorful! Yum.

Easiest Slow Cooker Meat Loaf

Our weather has been so great I have been spending a lot of time outside in my garden and citrus. The gang were all hungry for tomato sauce Meat Loaf. I got out the two slow cookers and went to work. Fast and super easy to put together. Did I mention yummy too???

I used 4 pounds of sirloin ground beef ( making two loaves), breadcrumbs that are Italian seasoned, 4 eggs, one onion diced finely, garlic and onion powders and then formed two meat loaves. Placed them into the slow cookers with 2 cups (homemade) marinara sauce in each and let them cook on low 2-3 hours.

I served them with creamed mashed potatoes, green beans and honey baby carrots. Sprinkle some grated cheese on the top before slicing.

Everyone was smiles-especially me, an easy day in the kitchen!

Ham n’ Egg Cheese Breakfast/Brunch Pizza

Using any dough (fresh or frozen) roll out dough on a clean work surface, create a rim around the diameter, add scrambled eggs, ham cubes, cheese, diced tomatoes, garlic and onion powders. Fresh parsley.

 Bake on a pizza stone or baking sheet pan @ 425 F for 15-18 minutes.

Scrumptious for breakfast or brunch on a weekend!
