Perfectly grilled Rib-Eye Steaks

Its all in the seasoning of these big thick Rib Eye Steaks. The Meat Market had them on sale this week! I always use Montreal Grill Seasoning. I use a lot of it on both sides of room temperature rib eyes. Grill to your liking.

So tender and juicy-love a good tender steak!! How about you?

I make potato wedges in the oven and a green salad or fruit salad to accompany these steaks!

Baked Cubed Steak with Mustard Honey Sauce

Needing a quick supper? These cubed steaks are the answer! I lightly dust them with cornmeal and melted butter and bake @ 350 F for 18 minutes. For the Sauce: scant 1/4 cup Dijon mustard, 3 tablespoons pure honey, chopped fresh parsley. Super easy and ah so yummy!

We love these served with garlic mashed potatoes and mixed green vegetable.

Manwich Feta Burger

In a bowl add 1/2 cup feta cheese crumbles, 1/2 freshly squeezed lemon juice, handful cooked chopped spinach, black pepper to taste, stir and refrigerate. I use Sirloin Ground Beef and round out 1/2 pound burgers, grill them, toast a roll/bun, add Feta mixture to the bottom roll, add grilled burger, more Feta and diced tomatoes.

A Man’s sandwich!!!

Shrimp Boil to the Mountains!

New Potatoes, Corn on the Cob and tons of Shrimp made its way to the Mountains! Woo-Hoo. Who says you can’t have Seafood while relaxing among the trees? We used the large campfire pit and a huge pot hanging over the roaring fire and had a blast last night cooking this!

I recommend it, you’ll be happy you did!

We did roast marshmallows too!

Grilled and Seasoned (Boneless) Chicken Breasts

I seasoned these thick (boneless) Chicken Breasts with cumin, garlic salt, onion powder and grilled them. So easy and delicious. I made a fresh batch of homemade Potato Salad and cut two small seedless watermelons.

Outside dining made for a fun supper!

I also made a few dipping sauces, everyone was happy and full!

Slow Cooker Country Ribs over Jasmine Rice

A lot of after the Birthday Party (Friday night), Saturday (Anniversary Party), Sunday (Easter) I had so much clean-up I decided a quick slow cooker meal would do the trick! Just sear the country ribs, place them into the slow cooker, add honey BBQ sauce, set on medium for 4-6 hours. We love jasmine rice (with sliced scallions) add a green vegetable and dinner was served last night!

Delicious and easy!

PS No I am not yet caught up I am getting there though-LOL.

Baked Smoked Sausage and Lemon Spinach

Quick and easy supper tonight. 16 ounces Fresh Smoked Sausage, one teaspoon minced garlic, white pepper. 16 ounces fresh spinach, one fresh lemon, s & p to taste. I make the smoked sausage in the oven @ 400 F for 20 minutes. Boil spinach for 5 minutes, drain well add lemon juice, s & p.

Serve with a side of brown rice.

Easy and delicious!

Fresh, Cold, Watermelon

The produce market had these gems available and were they ever sweet and delicious. I bought four of them and refrigerated (in the spare one) cut into one last night. Oh my so yummy!

They are the seedless variety, one of our favorites. In Florida we prefer the round smaller ones to the large, heavy oblong ones. They are just so sweet!

Quick Lunch Pizza

Thin crust pizza baked in no time and is so easy and delicious. I do not use any meat on this but you certainly can add any you enjoy. Simply roll out (store bought) pizza dough thinly, add tomato sauce, sliced fresh tomatoes, garlic salt, onion powder, mozzarella cheese and grated parmesan.

I use a pizza stone and bake @375 F 12-14 minutes,

Cut and serve.

Fresh Cherry and Lemon (no bake) Dessert

I freeze Bing Cherries when they are in season and this is a fun dessert to put together. Using two cups pitted, sliced in half fresh cherries, add 2 tablespoons corn syrup and gently stir, refrigerate. For the Lemon cream topping I use 2 cups heavy cream, dash of sugar, 1/2 teaspoon vanilla extract, 2 whole lemons (juice , zest of one) and whip until combined-refrigerate 30 minutes.

To assemble using a glass square dish add cold cut cherries, smooth out the top, add lemon cream on top, zest.

Serve immediately!

Love this easy dessert!
