Italian Pot Roast Beef with Rotini pasta. So easy and delicious in the slow cooker. I use a 4-5 pounds chuck roast (or rump roast), sear both sides in canola oil, s & p, to taste, move to slow cooker, add one 22 ounces marinara or tomato sauce (your choice), one teaspoon garlic powder, one teaspoon basil, one teaspoon oregano, 1/2 onion sliced, cook on low heat 4-6 hours.
Boil Rotini pasta as per instructions, add butter and plate. Remove pot roast (it’ll fall apart), ladle or spoon on several helpings and enjoy! (I always have freshly grated cheese on the table!).
We just love this dish with a side salad and garlic toast!

We just love this Pineapple sweet quick bread. In a mixing bowl add one 5.5 ounce can crushed pineapple with juices, lime zest. 2 cups AP flour, one teaspoon baking powder, 1/2 teaspoon baking soda, one teaspoon vanilla extract, pinch of salt, zest of one lime, 1/4 cup canola oil, 2 beaten eggs.
Mix wet ingredients together, in a separate bowl mix dry ingredients, slowly add dry ingredients into wet (I use a stand mixer), once combined transfer to a non stick 5″ x 9″ loaf pan. Place into a 375 F oven and bake 45 minutes.
It smells wonderful baking!
Allow to cool, remove from pan and slice.

Late night Snack! Hash brown pizza-Yum! 16 ounces frozen shredded hash brown potatoes, one onion diced finely, 1/4 cup real bacon bits, 1-1/2 cups mozzarella cheese, chopped fresh basil. In a deep baking dish add hash brown potatoes, diced onions, press down with a sturdy spatula, add some canola oil over the top, s & p, pop into a 450 F oven and bake 20 minutes. Remove from oven, add all other ingredients and pop back into the oven , reduce temperature to 400 F and bake 10 minutes.
Remove from oven, slice and enjoy! I usually have several ramekins filled with warm homemade tomato sauce on the side.
NOTE: You can use any meat, cooked sausage, pepperoni, chicken and any sauce side dish, sour cream and chives or ranch dressing. Make it your own!

For “Cheer” add Bacardi rum
Cranberry Juice Spritzers. These are so refreshing for the holidays. In a large Pitcher add 64 ounces Light Cranberry Juice (I use Ocean Spray Brand), one liter of Seven Up soda (or any lemon-lime soda), crushed ice, lemon slices, lime slices (for garnishing). Add a cranberry on top with a lemon and lime slice for garnish. Stir mixture well before serving.

PS-If you’d like to bring a bit of “Cheer” into the picture and recipe add your favorite Bacardi Rum, Absolut Vodka, Gin would work and be happy! LOL
Great lunch anytime. Cut up deli thick slice salami into cubes, chunk of cheese (your choice) (I use provolone and cheddar) into cubes, black or green olives (your choice) 1/2 cucumber cut into small cubes, one roma tomato cubed, mixed micro greens chopped, 1/2 green bell pepper cubed (or jalapeno pepper sliced), oregano, basil, onion salt, black pepper, garlic clove minced, Olive Oil and vinegar (your choice).
Add all ingredients into a larger bowl and toss well, transfer to individual bowls, chill and serve.
Great with crackers or Italian bread slices. Yum!

"Cheffie Cooks" Favorite Original Recipes
A wonderful side dish for the upcoming holidays (or anytime). We love these red potatoes, baked with lemon butter and parsley, garlic salt, onion powder, I just peel them in the center, add into a baking dish with 1/4 cup vegetable broth, 1/4 stick melted butter 1/2 fresh lemon (juice), seasonings, cover with aluminum foil and bake @ 375 F for 30 minutes.
Great with any main dish entrée.

I whipped up a batch of these yummy cookies today! Using a 15.5 ounce can of Libby’s pumpkin filling, 1/4 cup chopped walnuts, 2-1/2 cups AP flour, 2 eggs beaten, 1/4 cup (packed) brown sugar, one teaspoon baking powder, 1/2 teaspoon baking soda, pinch of salt, Mix dry ingredients with a whisk, add eggs, pie filling and run mixer on low, add remaining ingredients. Drop a large scoop onto a non stick sheet pan and bake @375 F for 12 minutes. Place on a cooling rack.
For the Icing: one cup confectioners sugar, one teaspoon vanilla extract, 2 tablespoons milk, 1/4 teaspoon pumpkin spice mix, stir well and drizzle over cookies.
Just yummy!

"Cheffie Cooks" Favorite Original Recipes
These are a new flavorful stuffed pepper that is so delicious! I use 3 red bell peppers, 3 green bell peppers I cut the tops and reserve them, clean out the cavity of seeds and membranes, rinse and dry each one. In a mixing bowl I has 2 cups cooked rice, on lemon for juice, 2 tablespoons pure olive oil, one tablespoon oregano-parsley, black pepper, garlic salt. 1-1/2 cups crumbled Feta Cheese. 1 cup vegetable stock.
In a mixing bowl add rice, seasonings, lemon juice, olive oil, herbs and stir well, fill each pepper cavity full, add feta cheese crumbles, replace tops. Place each stuffed pepper in a 9 x 12 baking dish with vegetable stock, lightly tent foil and place in a 400 F oven for 25 minutes.

Yummy Fall Treat!
I made a huge batch of these fun, delicious treats! Using one box of Rice Krispy Cereal (11.5 ounces), 1-1/4 cup clear corn syrup, 1-1/4 tablespoons of (McCormick’s) Pumpkin Spice Mix, one tablespoon Honey, pinch of nutmeg.
Grease a 9″ x 12″ baking (clear-Pyrex) dish and set aside. In a large bowl add 1/2 of the rice Krispy Cereal, remaining ingredients (yes it’ll be sticky) use a sturdy spatula, mix, stir, fold, add remaining cereal mix to well combine, transfer to the prepared dish, smooth it out with an offset spatula, cover with plastic wrap and refrigerate until ready to cut into squares and serve.
Yum-its a favorite-easy treat!

I brought along two frozen chicken fryers, thawed them, cut them up and marinated them in sour cream and black pepper in the refrigerator for one hour. I coated them well with seasoned bread crumbs, place on two rimmed non stick sheet pans at 425 F with a tent foil (turned them after 20 minutes of bake time) and baked for 20 more minutes until golden brown. Oh Yum!
Having a relaxing time while Hurricane Matthew slams our coast in Florida!

We had an early supper and the gang are on a hayride with their Grandpa and Dad; their mission is to get some pumpkins to paint faces on. lol
MoM was telling me about the trip and that I was going to go along. She has a way of assuring me that everything is fine. Her touching hand always lets me know she loves me. People do not think kitty cats are smart or communicative but rest assure I am because of the time my MoM spends with me since I was a baby kitten. I sure do love her.

Supper Tonight!
Beef Chuck Roast slow cooked with carrots, onions and potatoes. Oh my yum. I let the roast cook for 6 hours on low in the slow cooker, I only cooked the veggies about 1-1/2 hours of the cooking time. The meat was so tender it fell apart easily. We are happy campers! Campfire tonight with s’mores for dessert! Woo-Hoo.

So myself and another (non food related Blogger) are communicating with the Public Forum to which no one knows why since last week the Reader does not post our photo’s? Hum…really. For those of you who actually pay for a .com site (unlike me who won’t I do not really see an advantage there). But, then I am not into statistics. However, what is right is right, and when the problem is with WP I feel they should bend backwards, forwards to resolve the issue. Wouldn’t you agree? So the problem is simply the photo will not go into the reader with content text. Up to last week this was NEVER an issue.
My friends have expressed concern too that they were not showing up in the reader at all. Now then why is that and they were in fact .com sites?!
I can manually enter their sites to view that isn’t the issue. What is in my humble opinion is total inconsistency on the part of WP without regard to resolving the issues…Makes me wonder…How about you?
If you do not see a photo in the reader from any of my 9 websites, just click visit and the photo and content will appear on the site.

Wow is this good! 4 ounces chocolate (of your choice-I used Milk Chocolate) chopped, 1 cup Cold evaporated Milk, 1/4 cup sugar, 3 teaspoons Pure Vanilla Extract add these ingredients into your blender and process until smooth. 2 cups Heavy Cream, whipped until soft peaks form, fold into chocolate mixture, place in dessert cups and refrigerate until ready to serve. Garnish with Chocolate curls.

Delicious soup, easy to make. One can 5.5 ounce clams in natural juices. 2 Yukon gold Potatoes peeled and diced, one celery stalk diced finely, one shallot diced finely, 1 cup Milk, 1/2 cup light cream, 1 cup low sodium Vegetable stock, one tablespoon Old Bay Seafood Seasoning, fresh chopped parsley, pepper to taste, add croutons, crackers, or a side of bread and butter. I like to simmer all ingredients 20-25 minutes (or until potatoes are tender). Stir frequently.
Ladle in soup bowls and dig in. We love oyster crackers-the real ones (when I can find them!).
