Shrimp Ceviche

Super easy and delicious perfect or any party or get together! 16 ounces large shrimp-deveined, 2 fresh limes, one avocado, garlic and onion powder, parsley.  

In a large bowl add shrimp and fresh lime juice, onion and garlic powder, stir gently, cover with plastic wrap and refrigerate at least 1-2 hours. Cut avocado in small pieces and add into mixture with parsley.

Serve in any type of vessel you like.

Chicken & Wild Rice Soup

Super easy and delicious soup! 1-1/2 cups cubed cooked chicken, one carrot-diced, one celery stalk-diced, 2 cups wild rice-cooked, 2 cups vegetable or chicken stock, few dashes of Worcestershire sauce, 1 teaspoon garlic powder, 1 shallot-diced finely, pepper to taste.

Pre-cook wild rice al dente, set aside. In a soup or stock pot (lidded) add stock, carrot, shallot, celery, and cook on medium heat 10 minutes, stir and reduce heat to low, add all other ingredients and simmer for 8 minutes.

Ladle in soup bowls and enjoy!

Sweet & Sour Scallops

A fun Seafood dish that takes only minutes to prepare! 8 ounces fresh Sea Scallops, 1 cup halved grape tomatoes, 1 cup pineapple chunks in natural juices, one cup cooked rice with herbs, dash of white vinegar, 2 tablespoons parsley flakes, dash of garlic powder, 2 tablespoons canola oil.

In a deep skillet add oil, pineapples and juices, vinegar, stir on medium heat, cook 2 minutes, add grapes tomato halves, garlic powder, parsley, stir gently, cook one minute, add sea scallops cook 3 minutes, make sure you continually gently stir.

Add a serving of cooked rice on a plate and ladle seafood mixture.

Absolutely delicious!

Breakfast Burritos

Breakfast is an important start of any day in our home. Once a month I spend the entire day making freezer foods. Yesterday I made breakfast burritos which are a snap to make, freeze easily and re-heat for a nutritious, fast breakfast! They are just as great for a quick lunch or light supper with fresh fruit.

One of the fun parts of this is you can use any ingredients you like with the egg burritos. Cheese is popular in my household. Use whatever you like to create and freeze these burritos.

I will usually make 2 dozen to freeze at a time. Be sure to wrap securely to avoid freezer burn!

On a busy, hectic morning I am glad I have these ready-to-go!

Lemon & Herb Roasted Chicken-One Pan Dish

Delicious one pan dish. 4 large Chicken Breasts (bone-in skin on), 1-1/2 cups low sodium chicken stock, one red onion-sliced thick, one fresh lemon-sliced, 4 red potatoes-quartered, one teaspoon oregano, one teaspoon parsley, dash of cumin, black pepper, to taste, 2 tablespoons melted butter, 2 garlic cloves.

Rinse and pat dry chicken breasts, place in a large baking dish, add melted butter over chicken, sprinkle herbs, add cut potatoes, onion, fresh lemon slices, pepper, cumin, garlic cloves, slowly add chicken stock. Place into a 375 F oven and roast 45 minutes.

Serve and enjoy!

Lasagna

You need to make a dish of Lasagna tonight! There are so many versions however, this one is a flavorful, easy one. Using no-cook lasagna noodles, add three noodles to the bottom of a non stick 9″ x 12″ baking dish. I use Ricotta cheese and chopped spinach mixture in between layers of noodles, lots of tomato or marinara sauce, topped with crispy bacon pieces and mozzarella cheese.

Simply cover baking dish with foil, add into a hot 350 F oven and bake one hour.

Serve with a side green salad and garlic toast!

Cream of Chunk Cauliflower & Veggie Soup

I made a big pot of this soup last night and it was so delicious. Often, I will have a cup of soup available for those who want one before serving the main course.

 I used one large head of fresh cauliflower, 1 cup low sodium vegetable stock, 1 cup light cream, 1-1/2 cups whole Milk, one tablespoon corn starch, one cup baby carrots, 4 strips crispy cooked bacon (crumbled) one teaspoon black pepper, handful of flat leaf parsley.

Core fresh cauliflower cut the large florets into bit size pieces, boil in salted water for 8 minutes, drain, set aside. Boil in another small pot the baby carrots until tender, drain. In a large (lidded) soup pot add vegetable stock, cream, milk, corn starch on low heat, stirring. Add cauliflower florets cover pot and cook 10 minutes.

Transfer to a large serving bowl, add carrots, cracked black pepper, parsley and bacon pieces.

So creamy and delicious.

Mediterranean Roasted Potatoes & Peppers

Adding fresh lemon and herbs, olive oil to these roasted veggies compliments any main course. They are so easy and flavorful. I add 4 cubed Yukon Gold Potatoes, one red pepper chopped roughly, one half onion chopped, s & p, to taste, 2 tablespoons olive oil, one fresh lemon (juice only), toss all ingredients with clean hands on a rimmed non stick baking sheet pan, add a dash of oregano, parsley, basil, toss again gently and bake @ 400 F for 15-18 minutes (I flip them at about the hallway point and spread out again in a single layer). Once fork tender remove from the oven into a serving bowl.

Enjoy we love them!

Chicken~Spinach Burgers

We love these non traditional burgers using fresh ground (16 ounces) Chicken (or Turkey Meat), 2 cups baby spinach, optional feta cheese crumbles, black pepper, to taste, dash of Worcestershire sauce. They can be grilled or baked.

In a large mixing bowl add ground chicken, chopped fresh baby spinach, feta (if using), black pepper, Worcestershire, mix well form 4 large patties, 4 rolls/buns of your choice, any condiments you love (lettuce, kale, spinach, tomato, onion, cheese, etc.). I love to bake these on a rimmed baking sheet pan @ 400 F for 12-14 minutes, (turning them at the hallway point).

Serve with pickles and chips.

Maple Bacon Mini Meat Loaves

These individual baked meat loaves can be frozen for quick weeknight meal. I use 2 pounds Lean Ground Beef, one small onion diced finely, 2 cloves of garlic minced, black pepper to taste, 2 beaten large eggs, 2 cups seasoned bread crumbs, 8 slices bacon (cut in half), 3 tablespoons maple syrup.

Mix ground beef, onion, garlic, eggs, bread crumbs, pepper in a large mixing bowl, form mini meatloaves and place on rimmed baking sheet pans, add 2 half slices of bacon to each loaf, brush on maple syrup. Bake @ 400 F for 45 minutes.

We love these with cheddar mashed potatoes and green beans!

Creamy Shrimp Chowder

I had quite a bit of Shrimp leftover from the New Years Eve Party so I whipped up this easy, delicious Shrimp Chowder. I used 2 cups Fish Stock, 2 cups vegetable stock, 1 cup light cream, one tablespoon Old Bay Seafood Seasoning, 2 cubed potatoes, fresh parsley. 4 cups deveined, cooked large shrimp. Pepper to taste.

I boiled the cubed potatoes in salted water for 12 minutes, drained them and set into a bowl. In a soup pot I added, fish stock, vegetable stock, cream, old bay, on medium low heat. Stir well and cover. Cook for 10 minutes, add cooked potatoes and stir gently, cook for 6 minutes, add shrimp and cook for 4 minutes.

Soup’s done!

Garnish with parsley!

Enjoy.

Bacon & Cheese Puff Frittata

Delicious and easy baking Frittata. 12 large eggs, 1/4 cup cream, s & p to taste, 1/2 cup Monterey Jack cheese, 6 slices crispy cooked bacon (crumbled), fresh chopped parsley, garnish.

Pre Heat Oven 400 F, whip eggs and cream, s & p together until frothy, transfer to a prepare round baking dish, add grated cheese on top and place into the oven, bake 18 minutes, garnish with bacon crumbles, parsley.

Great for breakfast, brunch, lunch or dinner.

I made 3 pans for lunch today and served with fresh fruit salad and muffins.

Lemon Pudding Quick Dessert

Easy and quick dessert my family loves. One box Vanilla Wafer cookies, 2-boxes (4 oz.) Lemon Instant Pudding, 4 cups cold milk, 6 egg whites, 2 tablespoons sugar, dash of vanilla extract.

In a stand mixer bowl add box pudding and milk and run to combine. Line a dish (I use an oval one) with the vanilla wafer cookies, transfer lemon (instant) pudding on top of wafers. Using another mixing bowl and a hand mixer on high beat egg whites, vanilla extract and sugar until peaks form, spread on top of lemon pudding, place under the oven broiler to lightly brown the topping.

Spoon and serve.

Oh yum-o!!!

Cream of Cauliflower Soup

Fresh heads of cauliflower were on sale at my local produce market and I could not resist purchasing two heads and cooking up some cream of cauliflower soup! PERFECT for the chilly weather here in the Georgia Mountains.

I cored each head, cut up the cauliflower florets added into a soup pot with 1-1/2 cups vegetable stock (low sodium), few dashes of white pepper, 1 cup Milk, 1/3 cup light cream, pinch of salt and cook covered for 20 minutes on medium heat. I then carefully used my immersion blender to cream the soup. I lowered the temperature to simmer for a few minutes, stirred well covered.

I grated some fresh cheddar cheese, chopped some fresh parsley, ladled the soup in bowls, garnished and served with corn bread.

Yum! A great lunch!

Garlic Mash with Beef & Vegetables

I had quite a bit of leftover mashed potatoes from yesterday’s Christmas Dinner. I put this easy casserole together for lunch today. I used one pound sirloin ground beef, one finely diced small onion, 1/4 cup Worcestershire sauce, black pepper, one 8 ounce bag frozen vegetables (broccoli, cauliflower, carrots), 2 cloves minced garlic.

Saute the ground beef with onion, once cooked through add Worcestershire sauce, black pepper cook a few minutes on low heat with the vegetables, transfer to a baking dish. I used 3 cups leftover mashed potatoes and added them in a stand mixer bowl with minced garlic and whipped together. Transfer to the top of beef, spread in a single layer and bake @ 375 F for 10 minutes.

Easy and delicious!

Spicy Italian Sausage & Zucchini Stew

Having been on a spicy kick lately (with the gang away at Disney World) i was craving some spicy Italian Meal. I cut up one small zucchini in slices, 1/4 onion sliced, one large link of Hot Italian Sausage (remove casing), one carrot peeled, diced, 1 cup low sodium vegetable stock, 4 Roma Tomatoes, cut, 2 tablespoons tomato paste, 1/3 teaspoon red pepper flakes, one minced garlic clove, S & P, to taste.

I sauteed the hot Italian sausage in olive oil with the sliced onion, minced garlic until cooked through, transferred to a stock pot, added all other ingredients and covered on medium heat. I cooked it for about 15 minutes! Cut a chunk of Italian bread to soak up the juices. Garnished with grated parmesan.

Yum!

Broccoli & Cheese Soup

This soup is so easy and flavorful and definitely a favorite-lots of cheese and topped with bacon pieces. One large head of broccoli, cut. In a large soup pot add 2 cups Milk, 1/2 cup light cream, 1/2 stick unsalted butter, 2-1/2 cup sharp cheddar cheese, bring to a boil, reduce heat, add broccoli cuts, stir well, reduce heat to simmer, cover and cook 12 minutes. Cook several pieces of bacon crispy (cut into crumbles). Add black pepper to taste.

Serve and enjoy!

Its lunch today!

Caramelized Pears & Cranberry Crisp

Friday Night is always homemade pizza night and movie night! Tonight its all about Christmas Movies! I decided to make this easy, delicious Pear & Cranberry Crisp for dessert. I use 4 Bartlett Pears, peeled, cut, add into a skillet with 1/2 stick unsalted butter and caramelize for 20 minutes, add 1/2 cup dried cranberries and lower heat to simmer and cook 6 minutes.

For the crisp topping I crumble 6 shortbread cookies, dash of salt, 1/4 teaspoon cinnamon, one tablespoon light brown sugar, dash of nutmeg and mix well. Sprinkle over the fruit and place into a 325 F oven for 6 minutes. Serve with a scoop or two of vanilla ice cream!

Yum-oooooooooooooooooooooooooooooooooooo!!!

Bagel Halves with Tavern Ham & Tomato & Cheese

I stopped by the bagel shoppe this afternoon and bought one dozen fresh bagels! I had some wonderful Tavern Ham leftover, ripe tomatoes and I always have cheese to grate and use. I put on a slow cooker of soup this morning and thought these would go along perfectly! They did!

I just sliced the bagels in half, buttered them and popped them into the oven under the broiler for a few minutes to toast lightly. Added a few slices of tavern ham, slice of tomato, grated cheese and placed back into the oven for a few minutes and served them with the soup.

Easy, delicious supper.

Now, on to wrapping gifts!

Slow Cooker Beef Stew

On a busy night the slow cooker is the answer! From my butcher shop I get 3-4 pounds of lean stew meat, small red potatoes,  a few carrots, one stalk celery, one small onion, 1/2 cup beef broth, 2 tablespoons tomato paste, salt and black pepper, one garlic glove minced. I will always sear the stew meat in olive oil, s & p, then transfer to the slow cooker, cut carrots, celery, peel potatoes, add beef broth, tomato paste, garlic, gently stir place on low heat and cover.

Allow to cook 4-6 hours. The meat will be fork tender. Serve with biscuits and butter!

Enjoy this easy, flavorful dinner.

Milk Chocolate Nut Clusters

The Christmas Music is playing, the gang is decorating one of the Live Trees, hot chocolate is made and these chocolate nut clusters are about ready to get eaten!!!

Super easy to make too-melt 8 ounces of good milk chocolate with 1/4 cup light cream, add 1/2 cups walnuts, 1/2 cups almonds, 1/2 cups pecans, stir well. Place cupcake wrappers in the tin wells and ladle the mixture full. Set in the refrigerator for one hour then they’re ready to serve.

Simply, delicious!

Easy, flavorful supper tonight! One Pan dishes are one of my favorite meals to put together. The oven does all the work! I sear the boneless chicken in olive oil, s & p and place into the hot oven for 20 minutes. Add vegetables, herbs and spices, 1/2 cup chicken broth, cover with foil and return skillet into the oven and bake @ 375 F for 30 minutes. The vegetables are tender and so delicious.

Lump Crab Meat Toastettes

What a delightful, delicious appetizer for any family get together. Dazzle your company with these easy to prepare toastettes. I use French bread cut into 1/2″ slices, 1-1/2 pounds Fresh Lump Crab Meat, red bell pepper. Add lump crab meat into a mixing bowl, slightly break apart with a fork, add lemon juice (one fresh lemon), 2 tablespoons light mayonnaise, 1/4 cup sour cream, one tablespoon Old Bay Seafood Seasoning, white pepper, finely diced red bell pepper. Fold all ingredients together, chill one hour.

Slice French bread and lightly toast under the broiler (watch them!), remove from oven, spread a generous portion on top.

Serve and enjoy!

We love these! They’ll be on the Appetizer table this Thanksgiving!

Peanut Butter Bars (no bake)

Peanut Butter bars are so yummy! Spray a 9″ x 12″ glass dish and set aside. In a mixing bowl add two cups creamy peanut butter, one cup crunchy peanut butter, 1/4 cup packed light brown sugar, 1/4 cup pure honey, and stir well to combine, transfer to the prepared glass dish and smooth out with an offset spatula. Top with 1/2 cup chopped salted peanuts. Refrigerate until ready to serve and cut into squares.

Great snack for the Holidays or anytime.

Zucchini Meat Sauce and Cheese Boats

These zucchini boats I make year round. So easy and scrumptious. Using 2 medium sized zucchini rinse well, dry, cut lengthwise, scoop out just a small amount from the center, and place into a saucepan. Add 20 ounces of tomato sauce (your choice) on low heat, add one teaspoon basil, one minced garlic clove, stir well. In a skillet brown 8 ounces of ground beef and 1/2 onion diced, s & p to taste, drain and add into sauce pot, stir to combine, cook 10 minutes on medium/low heat. Fill zucchini boats full of meat and sauce, add mozzarella cheese on top and place in a non stick baking dish. Place into a hot 400 F oven and bake 18 minutes covered with foil. Serve with some garlic toast and a salad-a perfect Italian meal in no time.

The Drain Board…

Before remodeling took place kitty Tyler (Age 7 months) loved the drain board in the back kitchen. His fixation with it was so comical. Did not matter if it was full of pots and pans or one glass he’d snuggle his way into it. How many times I found him (just too many to count). I would re-wash anything he came in contact with but, most importantly he made me laugh so hard!

Later in the day me chillin” by the water which was just like bath water (At least 80 degrees), high in the 90’s.

Although, I personally prefer the Atlantic (East Coast) Ocean side of Florida, I can not deny the beauty on Florida’s West Coast.

If you ever have an opportunity to visit this side of Florida I do not think you’ll be disappointed!

Scratch It!!!

I started Tyler with scratch pads (several) at a young age. Today, he uses them all the time. I will occasional add some catnip for him (he loves that). He is about 6 months old here (this is an old pic from an old cell phone). I always had a room set-up exclusively for him, his toys, blankets, etc. To me declawing a cat is cruel as it is a painful process and if by chance he were to ever get outside of the home he could not defend himself. So, scratch pads are the easy, economical answer to his need to sharpen his nails and save my home from destruction (including furniture). He has never damaged a thing! He is a very good boy kitty and I love him dearly.

Italian Pot Roast with Rotini Pasta

Italian Pot Roast Beef with Rotini pasta. So easy and delicious in the slow cooker. I use a 4-5 pounds chuck roast (or rump roast), sear both sides in canola oil, s & p, to taste, move to slow cooker, add one 22 ounces marinara or tomato sauce (your choice), one teaspoon garlic powder, one teaspoon basil, one teaspoon oregano, 1/2 onion sliced, cook on low heat 4-6 hours.

Boil Rotini pasta as per instructions, add butter and plate. Remove pot roast (it’ll fall apart), ladle or spoon on several helpings and enjoy! (I always have freshly grated cheese on the table!).

We just love this dish with a side salad and garlic toast!

Pineapple Quick Bread

We just love this Pineapple sweet quick bread. In a mixing bowl add one 5.5 ounce can crushed pineapple with juices, lime zest. 2 cups AP flour, one teaspoon baking powder, 1/2 teaspoon baking soda, one teaspoon vanilla extract, pinch of salt, zest of one lime, 1/4 cup canola oil, 2 beaten eggs.

Mix wet ingredients together, in a separate bowl mix dry ingredients, slowly add dry ingredients into wet (I use a stand mixer), once combined transfer to a non stick 5″ x 9″ loaf pan. Place into a 375 F oven and bake 45 minutes.

It smells wonderful baking!

Allow to cool, remove from pan and slice.

Hashbrown Pizza

Late night Snack! Hash brown pizza-Yum! 16 ounces frozen shredded hash brown potatoes, one onion diced finely, 1/4 cup real bacon bits, 1-1/2 cups mozzarella cheese, chopped fresh basil. In a deep baking dish add hash brown potatoes, diced onions, press down with a sturdy spatula, add some canola oil over the top, s & p, pop into a 450 F oven and bake 20 minutes. Remove from oven, add all other ingredients and pop back into the oven , reduce temperature to 400 F and bake 10 minutes.

Remove from oven, slice and enjoy! I usually have several ramekins filled with warm homemade tomato sauce on the side.

NOTE: You can use any meat, cooked sausage, pepperoni, chicken and any sauce side dish, sour cream and chives or ranch dressing. Make it your own!

Cranberry Juice Spritzers. These are so refreshing for the holidays. In a large Pitcher add 64 ounces Light Cranberry Juice (I use Ocean Spray Brand), one liter of Seven Up soda (or any lemon-lime soda),  crushed ice, lemon slices, lime slices (for garnishing). Add a cranberry on top with a lemon and lime slice for garnish. Stir mixture well before serving.

Great lunch anytime. Cut up deli thick slice salami into cubes, chunk of cheese (your choice) (I use provolone and cheddar) into cubes, black or green olives (your choice) 1/2 cucumber cut into small cubes, one roma tomato cubed, mixed micro greens chopped, 1/2 green bell pepper cubed (or jalapeno pepper sliced), oregano, basil, onion salt, black pepper, garlic clove minced, Olive Oil and vinegar (your choice).

Add all ingredients into a larger bowl and toss well, transfer to individual bowls, chill and serve.

Great with crackers or Italian bread slices. Yum!

We love these red potatoes, baked with lemon butter and parsley, garlic salt, onion powder, I just peel them in the center, add into a baking dish with 1/4 cup vegetable broth, 1/4 stick melted butter 1/2 fresh lemon (juice), seasonings, cover with aluminum foil and bake @ 375 F for 30 minutes.

Great with any main dish entrée.

Pumpkin Nut~Iced Cookies

I whipped up a batch of these yummy cookies today! Using a 15.5 ounce can of Libby’s pumpkin filling, 1/4 cup chopped walnuts, 2-1/2 cups AP flour, 2 eggs beaten, 1/4 cup (packed) brown sugar, one teaspoon baking powder, 1/2 teaspoon baking soda, pinch of salt, Mix dry ingredients with a whisk, add eggs, pie filling and run mixer on low, add remaining ingredients. Drop a large scoop onto a non stick sheet pan and bake @375 F for 12 minutes. Place on a cooling rack.

For the Icing: one cup confectioners sugar, one teaspoon vanilla extract, 2 tablespoons milk, 1/4 teaspoon pumpkin spice mix, stir well and drizzle over cookies.

Just yummy!

These are a new flavorful stuffed pepper that is so delicious! I use 3 red bell peppers, 3 green bell peppers I cut the tops and reserve them, clean out the cavity of seeds and membranes, rinse and dry each one. In a mixing bowl I has 2 cups cooked rice, on lemon for juice, 2 tablespoons pure olive oil, one tablespoon oregano-parsley, black pepper, garlic salt. 1-1/2 cups crumbled Feta Cheese. 1 cup vegetable stock.

In a mixing bowl add rice, seasonings, lemon juice, olive oil, herbs and stir well, fill each pepper cavity full, add feta cheese crumbles, replace tops. Place each stuffed pepper in a 9 x 12 baking dish with vegetable stock, lightly tent foil and place in a 400 F oven for 25 minutes.

Yum!

Pumpkin Spice Rice Krispy Treats

Yummy Fall Treat!

I made a huge batch of these fun, delicious treats! Using one box of Rice Krispy Cereal (11.5 ounces), 1-1/4 cup clear corn syrup, 1-1/4 tablespoons of (McCormick’s) Pumpkin Spice Mix, one tablespoon Honey, pinch of nutmeg.

Grease a 9″ x 12″ baking (clear-Pyrex) dish and set aside. In a large bowl add 1/2 of the rice Krispy Cereal, remaining ingredients (yes it’ll be sticky) use a sturdy spatula, mix, stir, fold, add remaining cereal mix to well combine, transfer to the prepared dish, smooth it out with an offset spatula, cover with plastic wrap and refrigerate until ready to cut into squares and serve.

Yum-its a favorite-easy treat!

Baked Black Pepper & Sour Cream Chicken

Supper Tonight!

I brought along two frozen chicken fryers, thawed them, cut them up and marinated them in sour cream and black pepper in the refrigerator for one hour. I coated them well with seasoned bread crumbs, place on two rimmed non stick sheet pans at 425 F with a tent foil (turned them after 20 minutes of bake time) and baked for  20 more minutes until golden brown. Oh Yum!

Having a relaxing time while Hurricane Matthew slams our coast in Florida!

MoM was telling me about the trip and that I was going to go along. She has a way of assuring me that everything is fine. Her touching hand always lets me know she loves me. People do not think kitty cats are smart or communicative but rest assure I am because of the time my MoM spends with me since I was a baby kitten. I sure do love her.

Supper Tonight!

Beef Chuck Roast slow cooked with carrots, onions and potatoes. Oh my yum. I let the roast cook for 6 hours on low in the slow cooker, I only cooked the veggies about 1-1/2 hours of the cooking time. The meat was so tender it fell apart easily. We are happy campers! Campfire tonight with s’mores for dessert! Woo-Hoo.

A problem with Word Press Reader!

So myself and another (non food related Blogger) are communicating with the Public Forum to which no one knows why since last week the Reader does not post our photo’s? Hum…really. For those of you who actually pay for a .com site (unlike me who won’t I do not really see an advantage there). But, then I am not into statistics. However, what is right is right, and when the problem is with WP I feel they should bend backwards, forwards to resolve the issue. Wouldn’t you agree? So the problem is simply the photo will not go into the reader with content text. Up to last week this was NEVER an issue.

My friends have expressed concern too that they were not showing up in the reader at all. Now then why is that and they were in fact .com sites?!

 I can manually enter their sites to view that isn’t the issue. What is in my humble opinion is total inconsistency on the part of WP without regard to resolving the issues…Makes me wonder…How about you?

If you do not see a photo in the reader from any of my 9 websites, just click visit and the photo and content will appear on the site.

Chocolate Mousse

Wow is this good! 4 ounces chocolate (of your choice-I used Milk Chocolate) chopped, 1 cup Cold evaporated Milk, 1/4 cup sugar, 3 teaspoons Pure Vanilla Extract add these ingredients into your blender and process until smooth. 2 cups Heavy Cream, whipped until soft peaks form, fold into chocolate mixture, place in dessert cups and refrigerate until ready to serve. Garnish with Chocolate curls.

OH yum!

Clam and Potato Cream Soup

Delicious soup, easy to make. One can 5.5 ounce clams in natural juices. 2 Yukon gold Potatoes peeled and diced, one celery stalk diced finely, one shallot diced finely, 1 cup Milk, 1/2 cup light cream, 1 cup low sodium Vegetable stock, one tablespoon Old Bay Seafood Seasoning, fresh chopped parsley, pepper to taste, add croutons, crackers, or a side of bread and butter. I like to simmer all ingredients 20-25 minutes (or until potatoes are tender). Stir frequently.

Ladle in soup bowls and dig in. We love oyster crackers-the real ones (when I can find them!).
