The Big Party Sub Sandwich

On weekends at home and at our poolside, one of the most requested lunches are the Big Party Sub made sandwiches. I usually make two 20 ounce loaves filled with Roast Beef (bottom layer) Slice American white cheese/cut), Tavern Ham, sliced tomatoes, more sliced cheese, turkey, bibb lettuce and a mayo/mustard on the top of the loaves of bread. I keep them cold 30 minutes before slicing (I cut in 3″ pieces).

You’ll be surprised how quick these disappear!

Pretty and worth the effort to make and especially good to eat!

Chicken Fajitas

Chicken…Chicken…Chicken…

Not The Gourmet Next Door

These are such a fun and easy meal to put together. I use 2 whole Chicken breasts either baked or grilled, cooled then shredded. 1/2 red bell pepper, 1/2 green pepper, one white onion sliced, one minced clove of garlic, dash of chili powder, dash of salt and black pepper.

Saute the peppers and onions with minced garlic, chili powder, S & P, until softened. Add shredded chicken and stir gently cook 6 minutes. You can warm the flour tortillas in the microwave, if desired.

Fill the flour tortillas full and roll closed. A side of rice and beans goes well with these fajitas.

Cinco De Mayo-Mexican Grilled Corn on the Cob

The produce Market on Wednesday had corn on the cob available and on sale. We love Mexican grilled corn! I melt mexican cheese and a bit of sour cream together, use melted butter when grilling corn, add paprika, S & P, to taste, chopped cilantro and it is a party in  your mouth. 

Super flavorful and so easy!

Perfectly grilled Rib-Eye Steaks

Its all in the seasoning of these big thick Rib Eye Steaks. The Meat Market had them on sale this week! I always use Montreal Grill Seasoning. I use a lot of it on both sides of room temperature rib eyes. Grill to your liking.

So tender and juicy-love a good tender steak!! How about you?

I make potato wedges in the oven and a green salad or fruit salad to accompany these steaks!

Baked Cubed Steak with Mustard Honey Sauce

Needing a quick supper? These cubed steaks are the answer! I lightly dust them with cornmeal and melted butter and bake @ 350 F for 18 minutes. For the Sauce: scant 1/4 cup Dijon mustard, 3 tablespoons pure honey, chopped fresh parsley. Super easy and ah so yummy!

We love these served with garlic mashed potatoes and mixed green vegetable.

Manwich Feta Burger

In a bowl add 1/2 cup feta cheese crumbles, 1/2 freshly squeezed lemon juice, handful cooked chopped spinach, black pepper to taste, stir and refrigerate. I use Sirloin Ground Beef and round out 1/2 pound burgers, grill them, toast a roll/bun, add Feta mixture to the bottom roll, add grilled burger, more Feta and diced tomatoes.

A Man’s sandwich!!!

Shrimp Boil to the Mountains!

New Potatoes, Corn on the Cob and tons of Shrimp made its way to the Mountains! Woo-Hoo. Who says you can’t have Seafood while relaxing among the trees? We used the large campfire pit and a huge pot hanging over the roaring fire and had a blast last night cooking this!

I recommend it, you’ll be happy you did!

We did roast marshmallows too!

Grilled and Seasoned (Boneless) Chicken Breasts

I seasoned these thick (boneless) Chicken Breasts with cumin, garlic salt, onion powder and grilled them. So easy and delicious. I made a fresh batch of homemade Potato Salad and cut two small seedless watermelons.

Outside dining made for a fun supper!

I also made a few dipping sauces, everyone was happy and full!

Slow Cooker Country Ribs over Jasmine Rice

A lot of after the Birthday Party (Friday night), Saturday (Anniversary Party), Sunday (Easter) I had so much clean-up I decided a quick slow cooker meal would do the trick! Just sear the country ribs, place them into the slow cooker, add honey BBQ sauce, set on medium for 4-6 hours. We love jasmine rice (with sliced scallions) add a green vegetable and dinner was served last night!

Delicious and easy!

PS No I am not yet caught up I am getting there though-LOL.

Baked Smoked Sausage and Lemon Spinach

Quick and easy supper tonight. 16 ounces Fresh Smoked Sausage, one teaspoon minced garlic, white pepper. 16 ounces fresh spinach, one fresh lemon, s & p to taste. I make the smoked sausage in the oven @ 400 F for 20 minutes. Boil spinach for 5 minutes, drain well add lemon juice, s & p.

Serve with a side of brown rice.

Easy and delicious!

Fresh, Cold, Watermelon

The produce market had these gems available and were they ever sweet and delicious. I bought four of them and refrigerated (in the spare one) cut into one last night. Oh my so yummy!

They are the seedless variety, one of our favorites. In Florida we prefer the round smaller ones to the large, heavy oblong ones. They are just so sweet!

Quick Lunch Pizza

Thin crust pizza baked in no time and is so easy and delicious. I do not use any meat on this but you certainly can add any you enjoy. Simply roll out (store bought) pizza dough thinly, add tomato sauce, sliced fresh tomatoes, garlic salt, onion powder, mozzarella cheese and grated parmesan.

I use a pizza stone and bake @375 F 12-14 minutes,

Cut and serve.

Fresh Cherry and Lemon (no bake) Dessert

I freeze Bing Cherries when they are in season and this is a fun dessert to put together. Using two cups pitted, sliced in half fresh cherries, add 2 tablespoons corn syrup and gently stir, refrigerate. For the Lemon cream topping I use 2 cups heavy cream, dash of sugar, 1/2 teaspoon vanilla extract, 2 whole lemons (juice , zest of one) and whip until combined-refrigerate 30 minutes.

To assemble using a glass square dish add cold cut cherries, smooth out the top, add lemon cream on top, zest.

Serve immediately!

Love this easy dessert!

Roast Beef Au Jus

 

When I went to the Meat Market they had these lovely Roast Beef ready to season and Roast. I love to make several meals from one Roast. A favorite are hot Roast Beef Sandwiches Au Jus on a crusty hard roll. I add sauteed onions and bell peppers and gooey cheese. They are so delicious.

Cold sandwiches are scrumptious and sometimes I slice and freeze the rest for another meal.

Although, beef prices are up, in this case making several meals from one Roast proved to be economical!

Yay for the Meat Market!!!

Grilled Cheeseburger Deluxe

The gang wanted 1/4 pound cheeseburgers with lettuce, tomato, pickles, onion, on an onion roll toasted! Seasoned potato wedges baked and fruit! They were starving until we got home!

I lit the grill, rounded out the Burgers, and voila early supper and everyone is happy.

Its a beautiful day and we will be swimming shortly.

Crock-Pot Chuck Roast with Tomato Salsa

Using your crock pot or slow cooker, first sear the 6 pound Chuck Roast on both sides add into the crock pot. Slice one onion, add one bay leaf, 1-1/2 cups beef broth, dash of salt and black pepper, two garlic cloves. Cover and cook on low 4-5 hours.

Three Roma tomatoes cut into pieces add into a mixing bowl, one tablespoon garlic salt, one teaspoon onion powder, one teaspoon parsley, balsamic vinegar and pure Olive Oil, stir well and refrigerate until ready to serve.

Super tender meat with a tomato salsa and is it ever delicious!

Cupcake Easter Treats

 

 

Easter is not that far off and I love making different treats for the family! I made these several years ago and wanted to share them with you. I usually use any cake mix, chocolate or white or even yellow cake mix. Follow directions for 36 cupcakes using liners.

You’ll need a bag of small jelly beans, coconut flakes colored with green gel (for the grass). I just make a vanilla buttercream frosting.

The handles are thin red licorice, and the cupcakes are topped with jelly beans.

Its just one of several treats I make for Easter!

Chicken~Cheddar Rotini & Asparagus Bake

This casserole dish is so delicious and easy to put together. Cook (8 ounces) Rotini pasta until al dente, rinse, set aside. I use 6 ounces fresh thin asparagus blanched for 3 minutes in salted water, cut into pieces. 2 cups sharp cheddar cheese, one cup of Whole Milk, one cup cooked cubed chicken.

In a 9″ x 13″ non stick baking dish add Rotini pasta, asparagus pieces, stir gently, add milk and cheese, stir again, add chicken cubes and fold into mixture, cover with foil and bake @375 F for 12-14 minutes.

We love a side of fruit with this dish, serve with a green salad if desired.

Toasted Hot Italian Sausage ‘n Pepper Sandwich

We love Hot Italian Sausage and these sandwiches are a huge hit in my household. Thoroughly brown the Hot Italian Sausage links once cooked cut into 2″ pieces. In a saute pan add two tablespoons olive oil, brown one bell pepper (sliced) and one white onion (sliced) until tender, add tomato sauce and return sausage pieces. Cook 6-8 minutes.

I like to add butter on top of the Italian bread and toast lightly, cut loaves in thirds. Cut each third in half and add hot Italian sausage and peppers!

Yummy.

Seashells…

Some days walking the beach we find all sort of seashells. This is my latest find! I gather them up in a pail, bring them home, rinse them off with diluted bleach water, then they dry and are used in craft projects.

At the northern most end of this barrier island (next to the jetty) is where I find them. 

In all of our very busy lives one needs a hobby or two!

Baked Salmon with Lemon Yogurt Sauce

Wonderful Salmon was on sale at our Seafood Market and I could not resist it! I season each Fillet with a lemon pepper seasoning, fresh lemon juice and broil 4-5 minutes (skin side down). For the easy delicious sauce I use Greek Yogurt, lemon juice. black pepper, stir well. Spread on top, plate and devour!

Coat the cooked Salmon with the sauce and you will love the simple flavors. We love this with a green mixed salad and a vinaigrette dressing.

So light and flavorful! Yum.

Easiest Slow Cooker Meat Loaf

Our weather has been so great I have been spending a lot of time outside in my garden and citrus. The gang were all hungry for tomato sauce Meat Loaf. I got out the two slow cookers and went to work. Fast and super easy to put together. Did I mention yummy too???

I used 4 pounds of sirloin ground beef ( making two loaves), breadcrumbs that are Italian seasoned, 4 eggs, one onion diced finely, garlic and onion powders and then formed two meat loaves. Placed them into the slow cookers with 2 cups (homemade) marinara sauce in each and let them cook on low 2-3 hours.

I served them with creamed mashed potatoes, green beans and honey baby carrots. Sprinkle some grated cheese on the top before slicing.

Everyone was smiles-especially me, an easy day in the kitchen!

Ham n’ Egg Cheese Breakfast/Brunch Pizza

Using any dough (fresh or frozen) roll out dough on a clean work surface, create a rim around the diameter, add scrambled eggs, ham cubes, cheese, diced tomatoes, garlic and onion powders. Fresh parsley.

 Bake on a pizza stone or baking sheet pan @ 425 F for 15-18 minutes.

Scrumptious for breakfast or brunch on a weekend!

Broccoli ‘n Cheddar Gratin

Fabulous side dish any weeknight! One fresh head of broccoli (I use only the florets and freeze the stems). 2 cups shredded sharp cheddar cheese, one cup vegetable broth, one teaspoon garlic salt, pepper, to taste, one cup panko (or seasoned bread crumbs). Several tablespoons butter.

Blanch broccoli florets 3-4 minutes in boiling salted water. Drain, add into a baking dish, add vegetable broth, garlic, pepper, stir gently. In a bowl add shredded cheese and panko (or bread crumbs) mix well with clean hands, cover top of pre-cooked broccoli florets with mixture, add butter and bake @ 375 F 10-12 minutes.

Mango Baked Pork Loin Salad

I loveeeeeeeeeeeeee meat and salad together! So delicious and healthy. I had leftover Baked Pork Loin and put this wonderful salad together in a snap! I use 1 cup fresh baby spinach, 1/2 cut cooked green beans, one mango cut into cubes, 1/2 red onion sliced, a few white button mushrooms sliced, almond sliver halves for garnish with a light vinaigrette dressing.

Its is so much fun creating new salads!

Beef ‘n Cheese Enchiladas

We love enchiladas. So easy to prepare! One pound of ground beef, one can (10.5 oz.) Ro*tel diced tomatoes and chiles, 1 tablespoon taco mix, 1/2 diced onion, few dashes of hot sauce. Brown onions, ground beef until cooked through. Drain grease, add remaining ingredients, stir, cook 8 minutes. I use regular large flour tortillas filling each one and rolling them closed, seam side down in a non stick baking dish. Add enchilada sauce (or can use taco sauce) add lots of Mexican blended cheese and bake 15 minutes @ 375 F.

Garnish with more shredded cheese.

Beef Brisket with Caramelized Onion Gravy

A wonderful supper for a Weekend! I buy a 5-6 pound Beef Brisket from my Butcher/Meat Market, add seasonings, and bake @325 F for 4 hours in beef broth, covered. I use two white onions sliced, 2 tablespoons butter, olive oil and caramelize the onions for 30 minutes on the stove-top. I use the cooking juices to make a gravy by adding corn starch and bring to a boil.

We love sugar snap peas and mashed creamed potatoes and gravy, as side dishes.

The meat is so tender and flavorful.

Asparagus~Tarragon Salad

Salads are a large part of my daily diet, I love different combinations and this one is a favorite! 8 ounces Thin Asparagus, 4 radishes, one shallot, bunch of fresh tarragon finely chopped, 1/2 fresh lemon, s & p to taste, one tablespoon white vinegar, 2 tablespoons canola oil.

Blanch the asparagus spears in salted boiling water for 3 minutes, drain and allow to cool down then cut into thirds (each spear) add to a mixing bowl, add all remaining ingredients, toss gently, cover with plastic wrap and chill 30 minutes.

Healthy, nutritious and just yummy!!!

Baked Cumin Pork Chops

4 Center Cut Pork Chops, 2 cups cooked yellow rice with cumin and scallions, baby honey carrots. Outstanding supper that is a definite favorite here.

In a small bowl add 1 tablespoon cumin, black pepper, salt, onion and garlic powder and coat the Pork Chops on both sides, add to a baking (rimmed) sheet pan and bake @ 375 F for 45 minutes (turning at the halfway point)-cover with aluminum foil.

Cook yellow rice or rice of your choice, add one teaspoon cumin, 2 stalks scallions diced, gently stir. Serve with baked chops!

Yummy!

Cheddar Hash Brown Bake

One 16 ounce bag frozen shredded hash brown potatoes, 2 cups shredded cheddar cheese, one cup Milk, one teaspoon each salt and black pepper, dash of garlic powder and onion powder.

In a large mixing bowl add frozen hash browns, s & p, onion and garlic powder, stir and transfer into a non stick baking dish. Add milk and gently stir, smooth out the top of casserole and add shredded cheese across the top, cover with aluminum foil and bake @ 375 F for 30 minutes.

Makes a great side dish!

Eggplant & Feta Skillet

Super flavorful dish that is so easy to make! Its a favorite of mine. One small eggplant-peeled-cut in half and sliced thinly, 1/2 onion slice, 1/2 red bell pepper-sliced, one 14.5 ounce can diced tomatoes, 2 tablespoons good olive oil, one clove mince garlic, 2 slices (your choice of bread or can use seasoned croutons), s & p to taste, garnish with feta cheese crumbles.

In a large skillet (I use a cast iron one) add olive oil, onions, peppers, eggplant slices on medium heat saute until tender, drain any excess liquid, add minced garlic, stir, adjust heat to medium/low, add diced canned tomatoes, stir and cook 8 minutes.

Transfer to a serving bowl using a slotted large spoon, add toasted seasoned bread cubes or croutons, feta cheese crumbles, s & p to taste and enjoy!

Makes a great lunch or light supper!
