Caramelized Pears & Cranberry Crisp


Friday Night is always homemade pizza night and movie night! Tonight its all about Christmas Movies! I decided to make this easy, delicious Pear & Cranberry Crisp for dessert. I use 4 Bartlett Pears, peeled, cut, add into a skillet with 1/2 stick unsalted butter and caramelize for 20 minutes, add 1/2 cup dried cranberries and lower heat to simmer and cook 6 minutes.

For the crisp topping I crumble 6 shortbread cookies, dash of salt, 1/4 teaspoon cinnamon, one tablespoon light brown sugar, dash of nutmeg and mix well. Sprinkle over the fruit and place into a 325 F oven for 6 minutes. Serve with a scoop or two of vanilla ice cream!
