Pineapple Quick Bread

We just love this Pineapple sweet quick bread. In a mixing bowl add one 5.5 ounce can crushed pineapple with juices, lime zest. 2 cups AP flour, one teaspoon baking powder, 1/2 teaspoon baking soda, one teaspoon vanilla extract, pinch of salt, zest of one lime, 1/4 cup canola oil, 2 beaten eggs.

Mix wet ingredients together, in a separate bowl mix dry ingredients, slowly add dry ingredients into wet (I use a stand mixer), once combined transfer to a non stick 5″ x 9″ loaf pan. Place into a 375 F oven and bake 45 minutes.

It smells wonderful baking!

Allow to cool, remove from pan and slice.

  1. Delicious quick bread Cheryl. never thought to use pineapple and I love this. Isn’t it fun to experiment with different fruits when making these loaves.
